The following “recipe” was made in a 6QT slow cooker, you can adjust quantities to fit the size you have.
All sizes are approximate, use your judgement:
2Tbsp fat (for flavor I use bacon grease but if you plan on adding meat you don’t need to add any oil..if you’re using bacon grease I dare you to stop at 2Tbsp, just sayin’)
Optional: salt pork, bacon, ham, etc.
1 lb dry beans (I like mixed beans but I do NOT use the seasoning packet in them, it’s just chemicals!)
lots of water
14.8 oz can of diced tomatoes
½ onion, chopped
dash lime juice (lemon would work too I suppose)
salt, pepper, hot sauce or any other seasonings you like
What you do:
Turn the slow cooker to low and melt the bacon grease (or pour in oil). When melted add the onions & beans (and meat if you’re using it.) Quickly pour in enough water to cover the beans with 3” of water.
Cook on high for 6-8 hours or low for 10-12 hours.
30 minutes before serving add the can of tomatoes, lime juice and seasonings.
Garnish with sour cream, shredded cheddar, cilantro, etc.
There you have it, super easy bean soup. It freezes well, just add a little water to the bowl before you reheat it.

There’s nothing quite like bean soup to fill you up and feed a crowd. I made a big batch of mixed bean soup yesterday and my sister and mom asked how I made my beans, so I decided to share 🙂 I like to make things as simple and cheap as possible so I don’t pre-soak or pre-cook my beans, I don’t add meat if I don’t have it and I use my slow cooker.
