Breakfast Burrito Recipe – A Frugal Family Favorite!

I don’t like eggs but I love breakfast burritos. I can’t explain it, except maybe it’s because you can’t actually taste the eggs in the burrito.

In any case I made these for dinner this past weekend and my family LOVED them, even the kids who are like me and would rather starve than eat scrambled eggs.

These are super-simply to make and you can easily substitute almost any veggies and meat.

Breakfast Burrito Recipe
(makes 8-10 depending on tortilla size)

1 lb ground sausage with sage
7-10 eggs, beaten
1/2 onion, chopped
1 tomato, chopped
2 bell peppers, chopped
1 jalepeno, chopped (optional)
salt & pepper to taste
1/2 cup (or more) shredded cheddar
8-10 tortillas of desired size (I like soft taco size)

In a skillet brown the sausage for about 4 minutes. To the sausage add the onions, tomato, and peppers and cook for about 4 minutes, until the veggies start to soften.

Push the sausage and veggies to the side of the skillet and pour the eggs in, scrambling them as they cook. When the eggs are set blend the sausage & veggies into the eggs, add salt and pepper to taste. Cook until the eggs are done. Remove from heat & mix in cheddar.

Warm up the tortillas according to package directions and scoop some of the egg/sausage/veggie mixture into the tortilla and wrap it up.

    • I’ve never frozen them but I don’t see why they couldn’t be! I’d prepare them & let them cool in the fridge. Then I’d wrap them individually in plastic wrap or foil, then place them in a plastic bag for long-term freezer storage. To reheat I’d unwrap and microwave for 1 minute, then in additional 30 second spurts until it’s warmed through. Another option would be to unwrap, place in a baking dish, cover with shredded cheese and cook at 350 for 15-20 minutes 🙂
